If you like macaroons then this is the cookie for you. Preheat oven to 325 F. Line two cookie sheets with parchment paper. You will need these ingredients:
- 1 14 ounce bag of coconut, shredded
- 1 cup butterscotch chips
- 2/3 cup chopped or sliced almonds
- 2 tsp. almond extract
- 1/2 cup dried dates or cranberries if you prefer
- 1 can condensed milk
Mix it all together in a large bowl until blended. Drop by a spoon onto prepared pans. Bake for 15 minutes. Allow to cool on tray before removing to rack or plate.
