Coconut Lace Cookies

If you like macaroons then this is the cookie for you. Preheat oven to 325 F. Line two cookie sheets with parchment paper. You will need these ingredients:

  •  1 14 ounce bag of coconut, shredded
  •  1 cup butterscotch chips
  • 2/3 cup chopped or sliced almonds
  • 2 tsp. almond extract
  •  1/2 cup dried dates or cranberries if you prefer
  •  1 can condensed milk

Mix it all together in a large bowl until blended. Drop by a spoon onto prepared pans. Bake for 15 minutes. Allow to cool on tray before removing to rack or plate.20190605_122253 (1) coconut lace cookies
