Easy Blueberry Bread

I had some blueberries leftover and I was trying to figure out what to do with them. This is what I made. You will need:

  • 1/2 cup brown sugar
  • 1/4 cup granulated sugar
  • 1/2 cup butter-flavored shortening
  • 2 eggs
  • 1 tsp. vanilla extract
  • 2 cups flour
  • 1 tsp. baking soda
  • 1/2 tsp. salt
  • 1/2 cup milk
  • 1/2 cup blueberry low fat yogurt
  • 1 cup blueberries

Preheat oven to 350 degrees. Add  the first 5 ingredients into a bowl and stir well. Add the flour, baking soda, and salt until blended. Fold in the yogurt. Pour in the milk and mix well. Add the blueberries. Grease 2 small loaf pans or 1 loaf pan about 9x5x3 inches. Even out batter between the two pans or fold into 1 large pan. If using smaller pans bake for 40 minutes, otherwise the larger pan takes 55-60 minutes to bake. Insert a table knife in center to test doneness. Cool on a rack before slicing.
