Lemon-Almond Cookies

Here is a light but tasty cookie. You will need:

  • 3/4 cup olive oil
  • 1 cup sugar
  • 1 egg
  • 2 tsp. lemon extract
  • 1/4 cup milk
  • 2 cups flour
  • 1 tsp. baking powder
  • 3/4 tsp. salt
  • 1/2 cup sliced almonds

Preheat oven to 350 degrees F. In a bowl, add olive oil, sugar, egg, milk, and lemon extract. Stir until blended. Add flour, salt, and baking powder. Blend. Add nuts and stir. On an ungreased cookie sheet, drop a spoonful of dough at a time. Bake for 12 minutes. Remove from oven when bottom of cookies are a nice golden brown. Cool on a rack. Makes around 4 dozen.
