Banana Poke Cake

I made this cake for my daughter’s birthday & it was a big hit. Here’s how I did it. You will need:

  • 2 1/2 cups flour
  • 3 tsp. baking powder
  • 1 tsp. salt
  • 1 tsp. cinnamon
  • 1/2 tsp. nutmeg
  • 1/4 tsp. ground cloves
  • 1/4 tsp. baking soda
  • 1/2 cup shortening
  • 1/2 cup brown sugar
  • 1/2 cup granulated sugar
  • 3 eggs
  • 1 tablespoon of vinegar
  • 2 tablespoons milk
  • 1 tsp. vanilla
  • 1 cup mashed bananas
  • 1 pkg. instant banana pudding
  • Cool whip topping

Preheat oven to 350 degrees. Grease and flour two round nine in. cake pans or one sheet cake pan. In a bowl, cream sugars with shortening. Add eggs and blend together. Pour in vinegar and milk. Add the vanilla and stir. Next, mash the bananas and add to the other ingredients. Mix well. Add the spices, flour, baking soda, and baking powder. Blend well. Pour batter into your prepared pan(s). Using a spatula, spread the batter out evenly. Place in the oven and bake for half an hour. Meanwhile, make the pudding according to the package directions. Set aside. When the cake is done, allow to cool on a rack. Poke holes all over the cake with the end of a chopstick, straw, or pencil. Spread the pudding over the top of the cake. Add the Cool whip on top of the pudding and allow to set in the refrigerator until time to serve. Add sliced bananas to the top for added appeal. I also added a barrel of monkeys for decoration, but that’s up to you.
