Shredded Pork Empanadas

My husband had made some shredded pork a few days ago and my daughter doesn’t really care for leftovers, so I wanted to come up with something different, yet use the leftovers for dinner. This is what I made and my daughter loved it and it got her to eat her vegetables. You will need these ingredients:

  • 1 bowl of leftover cooked shredded pork
  • 1 grated apple
  • 1/4 cup golden raisins
  • 1 small zucchini grated
  • 1 small yellow squash grated
  • 1 celery stalk grated
  • 1-2 tsp. of chopped onion
  • 1/4 tsp. grounded cloves
  • 1 tsp. cinnamon
  • 1/4 cup chopped pecans
  • 4 cups flour
  • 1 1/4 tsp. salt
  • 1 1/3 cups butter- flavored shortening
  • 2/3 cup ice cold water

Keep the pork in its own bowl. In another bowl, add the vegetables, apple, spices, raisins, and onion. Blend well. Set aside. Preheat oven to 400 degrees. In a large bowl, mix the flour and salt together. Add the shortening. Chop up the shortening into the flour with a fork until it resembles coarse crumbs. Add the water. Using your hands, blend the dough together. Separate into 4 balls. On a floured surface, roll out one ball of dough to about 1/8 inch thickness. Cut circles in the dough by tracing around a cup with a table knife. Place a rounded spoonful of pork onto the center of the circle. Add the vegetable mixture. Wet the outer edges of the dough. Either fold one side over filling to meet opposite side or place another circle of dough atop the other. Press the sides with the tines of a fork. Place the empanadas on a baking sheet and bake for 15 minutes. Or fry in fat until browned at 365 degrees. Cool on a rack.

For shredded pork recipe you will need a small pork roast. Make a rub of dried mustard, salt, pepper, smoked paprika, onion powder, garlic powder, and a small amount of brown sugar. Rub all over the pork roast. Allow to rest for an hour and a half. Meanwhile, mix together 1/2 cup vinegar with 1/4 cup water. add a tablespoon of liquid smoke. Place the pork in a casserole dish. Turn the oven on to 300 degrees. Pour the liquid mixture over the roast and cook in the oven for 6 hours. Allow to cool. It should pull into sections.
