Breakfast Burrito

I like McDonald’s breakfast burritos, but I have wondered how to make them. This is what I came up with. You will need:

  • 1 pound pork sausage
  • 1 1/2 cups frozen O’Brien potatoes
  • 1/4 cup chopped onion
  • 1/4 cup red or green bell peppers
  • 4 eggs, beaten
  • 1/2 cup cheddar cheese, grated
  • flour tortillas

In a skillet, cook the sausage until no longer pink. Drain the grease. Add the potatoes, onion, and pepper. Cook approximately 8 minutes or until tender. Add the eggs and cook until set. Spoon the filling into tortilla shell and sprinkle with cheese. Fold the ends and sides over filling and roll up. You now have breakfast. Makes around 12, depending on how much filling used.
