Here is a light, fluffy cookie. You will need:
- 1 1/2 sticks of butter
- 1/2 cup brown sugar
- 1/2 cup granulated sugar
- 1 tsp. almond extract
- 1 egg
- 2 cups flour
- 1 tsp. cinnamon
- 1/2 tsp. nutmeg
- 3/4 tsp. salt
- 1 tsp. baking powder
- 1/2 cup chopped walnuts
Preheat oven to 360 degrees F. Melt butter in microwave. Pour into a large bowl. Add sugars, almond extract, and egg. Blend well. Add rest of ingredients except nuts. Mix well. Stir in the walnuts. On an ungreased cookie sheet, place a teaspoon of dough for each cookie. Bake for 10-12 minutes until they are a light crispy brown around the edges. Cool on a rack. Makes about 48 cookies.
