If you’re nuts for coconut, you’ll love the taste of these cookies. You will need:
- 1 stick of butter
- 1 tsp. coconut extract
- 1 egg
- 1/2 cup brown sugar
- 1/2 cup granulated sugar
- 1 cup flour
- 1 tsp. baking powder
- 1 tsp. baking soda
- 1/2 tsp. salt
- 1/2 tsp. nutmeg
- 1/4 tsp. ground cloves
- 1 tsp. cinnamon
- 1 cup rolled oats
- 1 cup shredded coconut
Preheat oven to 350 degrees F. Melt butter in a microwave for 30 seconds. Pour into a mixing bowl. Add egg, sugars, and extract. Stir. Add flour and spices. Blend well. Add oatmeal and coconut. Mix together. Drop a teaspoon of dough onto ungreased baking sheet. Bake for 10-12 minutes. Allow to cool. Makes 3 dozen.
