- 2 T. butter
- 1 cup dried apricots, chopped
- 2 eggs
- 1 cup sugar
- 1 tsp. vanilla
- 1 cup coconut, shredded
- 1 cup crushed graham crackers
- 1/2 cup chopped nuts
Melt butter in a skillet. Add the apricots and stir. Beat eggs then add to skillet. Add sugar and blend well. Cook over low heat for about fifteen minutes. Stir while it’s cooking. Remove from heat and stir in vanilla, coconut, graham cracker crumbs, and nuts. Drop by teaspoon onto waxed paper. Allow to set. That’s it.
