Ice Box Cookies With Fudge Frosting

I was looking for something different to make and an old recipe of my mother’s slipped from one of my cookbooks. It sounded interesting so I thought I would share it. For the cookie dough, you will need these ingredients:

  • 3 1/2 cups flour
  • 1 tsp. baking soda
  • 1/2 tsp. salt
  • 1 cup of butter
  • 2 cups brown sugar
  • 2 eggs
  • 1 tsp. vanilla
  • 1 cup of chopped nuts

In a large bowl, cream the butter with the sugar. Add the eggs and vanilla. Stir until blended. Add the flour, baking soda, and salt. Mix well. Add the nuts and stir. Cover the top of bowl and place the dough in refrigerator for an hour. Meanwhile make the frosting. You will need:

  • 1 cup granulated sugar
  • 1/4 cup milk
  • 1/4 cup butter
  • 1/8 cup cocoa
  • 1 tsp. vanilla

In a large saucepan, add all ingredients. Boil hard for one minute. Remove from heat and place saucepan in a bowl or pan of cold water. After it cools, beat until the frosting is thick. Add  vanilla. Stir.

Take cookie dough out of refrigerator. Preheat oven to 350 degrees F. Pinch off dough and drop by spoonful onto cookie sheet. Bake in oven for 10-12 minutes. Cool on a rack. After cookies are cooled off, then use frosting on them.
