If you’d rather have chicken than pork, this is the recipe for you. You will need:
- 1 large onion, chopped
- 3 garlic cloves, skin peeled and chopped
- 1/3 cup cider vinegar
- 5 tablespoons molasses
- salt & pepper to taste
- 1/2 tsp. liquid smoke
- 1/2 cup water
- 1/4 cup tomato paste
- 1 14 oz. can tomato sauce
- 1 whole cooked chicken, skin removed
- 6 buns or Kaiser rolls
Shred the cooked chicken off the bones and place in a bowl. Set aside. In a large skillet, heat a tablespoon or more of cooking oil. Add the onions and garlic to skillet. Cook until translucent and soft about 5 minutes. Add the tomato sauce, paste, water, vinegar, molasses, salt & pepper, and liquid smoke. Bring to a boil. Reduce heat to medium and simmer for about 15 minutes. Add chicken and cook 10 minutes. Serve over buns or rolls.
