Every year, my neighbors and I exchange treats for the holidays. I wanted something a little different and came up with this recipe. It’s easy to make. You will need these ingredients:
- 3 cups sugar
- 1 1/2 sticks of butter
- 2/3 cup evaporated milk
- 7 oz. jar of marshmallow creme
- 2 tsp. peppermint extract
- 3 squares of white chocolate baking bar
- 1/2 of an 8 oz. container of maraschino cherries, chopped
- 1/2 cup of crushed candy canes
Crush the candy canes in a coffee grinder and set aside. In a large saucepan, add sugar, butter, and evaporated milk. Cook on medium heat until mixture comes to a rolling boil. Stir frequently so it doesn’t stick to pan. Once mixture comes to a boil, cook for another 4 minutes. Remove from stove. Stir in white chocolate and marshmallow crème until blended well. Add the peppermint extract and candy canes. Blend it in until you get a creamy pink texture. Add the chopped cherries. Place some wax paper into a 9 inch pan until it extends over the edge of pan. Pour fudge into prepared pan. Scoop rest of it out with a long handled spoon. Allow fudge to set until firm. Lift out of pan, when cooled, by the wax paper. Cut into squares.
