CORN CHOWDER

I made this chowder yesterday and it was delicious! My husband ate 4 bowls! Here is my recipe. You will need these ingredients:

  • 4 cups low sodium vegetable stock
  • 2 slices cooked ham, chopped into small chunks
  • 1 medium onion, chopped
  • 3 medium size potatoes, chopped in small chunks
  • 3 ears of corn, cut off the cob
  • 2 T. flour
  • 1 cup of milk
  • 1 8 oz. pkg. cream cheese, softened
  • 1 tsp. each of salt & pepper
  • 1 celery stalk, chopped in small pieces
  • 1 pkg. frozen cauliflower with cheese sauce
  • 1/2 cup marinara sauce, optional

In a large saucepan, pour soup stock into it. Chop up vegetables, ham, and onion. Add to stock. Microwave cauliflower until no longer frozen and add to stock. Cook  stock until it boils. Continue to stir so doesn’t stick to pan. After it boils, turn heat down to simmer and cook about ten minutes more until potatoes are soft. In microwave, soften cream cheese about a minute and 20 seconds. Whisk flour, milk, and cheese together. Add to stock the cream cheese mixture, salt, pepper, and marinara sauce. Cook until cheese melts. Serve in bowls.20180902_180610 (1) chowder
