Wondering what to do with your holiday leftover cranberries? Here is a great recipe. You will need these items:
- 1/4 cup shortening ( I prefer butter-flavored Crisco)
- 1/2 cup brown sugar
- 1 egg
- 3/4 cup cranberry jelly pulp
- 1/4 cup cranberry juice
- 1 1/2 cup flour
- 1 tsp. baking soda
- 1 tsp. salt
- 1 1/2 cup quick oatmeal
- 1 cup milk
- 1 cup chopped pecans
- 1 tsp. cinnamon
- 1/2 tsp. nutmeg
Preheat oven to 350 F. degrees. Grease large loaf pan and set aside. In a large bowl, cream shortening with brown sugar. Add egg and cranberry pulp. Blend well. Add juice and stir it in well. Add flour, salt, spices, and baking soda. Mix it all in. Add the oatmeal and blend in. Add the milk and stir. Lastly, add the pecans and stir the batter. To your prepared pan, scoop the batter into it. Put it in the oven and bake for an hour. Cool on a rack. It’s a dark, sweet bread with a little crunchy. You’ll love it.
