I was searching for something different for dinner and came up with this recipe. My family loved it. First preheat the oven to 425 F. Grease a 12 x 8 casserole dish. For the filling, you will need:
- 1 pkg. envelope Lawry’s Enchilada Sauce
- 1 cup salsa
- 2 cups water
- 1 tsp. salt
- 1 cup whole kernel corn
- 1 small onion, chopped
- 2 cloves of garlic
- 1 1/2 # ground beef
Cook beef, onion, & garlic in skillet until browned. Drain the grease. Stir in the sauce, water, salsa, salt, and corn. Simmer on low. Meanwhile, make the crust. You will need these ingredients:
- 2 1/4 cups cornmeal
- 2 cups water
- 1 1/2 cups milk
- 1 tsp. salt
- 1 cup of cheddar cheese, grated
In a saucepan, combine salt, cornmeal, water, & milk. Cook on medium heat until thickens. Remove from heat. Save some of it for the topping. The rest of it, spoon into casserole dish and spread to edges of dish. Bake for ten minutes. Remove from oven and add the filling. Spread the remainder of the cornmeal on top. Sprinkle the cheese over it. Bake for seventeen minutes. Remove from oven and serve. Optional is to add sliced olives & chili’s on top.
