Cherry-Coconut Bars

What do you do if you don’t have the ingredients you need? You improvish. That is what I did and these bars came out wonderful. My neighbors and I exchange cookies every year around Christmas time. I wanted to do something a little different. You will need these ingredients:

  • 1 cup of flour
  • 1 stick of butter
  • 3 tablespoons of powdered sugar
  • 2 eggs
  • 1 cup sugar
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1/4 cup of flour
  • 1 teaspoon vanilla
  • 1/2 cup of coconut
  • about 10 cut-up maraschino cherries
  • 1/2 cup golden raisins
  • 1/4 cup oat cereal with almonds

Melt the butter in a microwave oven for 30 seconds. Pour it into a bowl. Add the powdered sugar and the 1 cup of flour. Stir together. Grease a 9 inch pan. with your fingers  spread the dough thin across the bottom of the pan. Bake at 350 degrees for 20 minutes. Allow to cool while you make the rest of the dough. Beat the eggs, then pour into a mixing bowl. Add the sugar, flour, salt, and baking powder. Blend well. Add the vanilla, cherries, raisins, and coconut. Mix well. Stir in the cereal. Spread dough over the  baked pastry. Bake for 20-25 minutes. Cool and cut into bars. It may look strange, but the taste will make you want more.
