Egg Soup

Here is an easy soup on a cold day. You will need these ingredients:

  • 4 cups chicken broth
  • 1 1/2 T. grated Parmesan cheese
  • 4 beaten eggs
  • dash salt
  • dash pepper
  • 1 cup cooked noodles
  • 1 1/2 T. flour or try semolina

Mix flour or semolina with cheese, salt, and pepper into a bowl. Add the beaten eggs. Set aside. Boil broth in a saucepan. When broth has boiled, add the noodles to it. Drop the egg mixture into the soup and stir. Lower the heat to simmer, but continue to stir so nothing sticks to the bottom of the pan. When eggs and noodles are done, the soup is ready. Optional: sprinkle top with parsley. Makes about 4 servings.
