I’m always thinking of different ways to use zucchini. Here is a delicious soup. You will need:
- 1 medium zucchini, cut into small chunks
- 1/2 cup orzo pasta, uncooked
- 1 T. parsley
- 1 T. basil
- 1 T. oregano
- 2 carrots, chopped
- 2 clove garlics, peeled and cut into small pieces
- 1 medium onion, cut into small chunks
- 3 cups beef broth
- 1 can diced tomatoes
- 1/2 pound bulk Italian sausage
- 1/3 cup olive oil
In the bottom of a large saucepan, pour in the olive oil. Turn heat on to medium. Add onions, garlic, carrots, and zucchini. Cook until onions start to get soft. Add spices, tomatoes, and beef broth. Bring to a boil. Meanwhile cook the sausage in a skillet over medium heat until sausage is no longer pink. Drain the grease. Crumble sausage and add it to the soup base. When soup boils, add the pasta. Return to a boil and cook about 10 minutes or until pasta is tender.
