I wanted something different for dinner and this is what I came up with. It turned out good. You will need these ingredients:
- box of rotini noodles
- 3 T. olive oil at least
- 1 red pepper, chopped
- 1 green pepper, chopped
- 1 clove garlic, chopped
- 1 celery stalk, chopped
- 1/2 onion, chopped
- boneless pork
- 2 T. butter
- 3/4 cup bread crumbs
- 1/2 cup shredded cheddar cheese
- 1 can golden mushroom soup
- 1 cup water
Preheat oven to 375 F. degrees. Rub a casserole dish with a thin layer of shortening. Set aside. Chop up garlic, peppers, onion, and celery. In a skillet, add olive oil. When oil warms, place the garlic mix in the skillet and cook until soft. Stir often. Meanwhile, chop up the pork into bite size pieces. When garlic mix ready, set aside. Add pork to oil in skillet and cook until no longer pink. Add mushroom soup, water, and garlic mixture with pork. Stir often. Meanwhile boil noodles. When noodles are soft, drain out water. Add noodles to prepared casserole dish. Pour pork mixture over noodles. Sprinkle cheese. Melt butter in microwave for 30 seconds. When done, pour butter into a bowl. Add bread crumbs and blend. Sprinkle bread crumbs over casserole. Place in oven and bake for 30 minutes.
